Observation: 1. Pork belly cooling on tray on top of open garbage can in kitchen
2. Raw meats soaking in marinate in walk in cooler on shelf above cabbage and celery
3.Long florescent bulb fixtures without protective covers.
Corrective Action(s): Ensure all food is protected from contamination.
1. Cool hot foods on tray in sanitary location away garbage or dirty areas. Tray moved to chest freezer area - satisfactory location
2. Ensure all raw bloody meats are stored separate or under ready to eat foods such as veggies - staff re-organized cooler during inspection
3. Install protective light bulb covers around long florescent bulbs to protect food from possible glass hazard. Operator is looking for supplier of protective sleeves for long version of bulbs.

Observation: 1.Raw wood used to level out legs of back prep sink.
2. Cardboard piece used to cover up hole in wall under back double mop sink
3. Black grime and mildew developing on walls around dish pit.
Corrective Action(s): Ensure all surfaces are smooth, durable, easy to clean and non-absorbent.
1. Paint or seal all raw wood to protect it from moisture and food debris. Paint.
2.Replace all cardboard and other thin temporary materials with solid and durable material to assist with pest entry prevention.
3. Clean and remove all black grime and mildew then seal and protect surrounding walls around dishpit with stainless steal or similar durable material from moisture and water splatter.

Comments

Routine:
-General sanitation was satisfactory. Some attention needed to area where warewashing sink attaches to the wall as some mold/mildew noted. Clean and sanitize area. Improvement to this surface may be needed to prevent future moisture related issues.
-Handsinks supplied with liquid soap and paper towel
-Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces
-High temperature dishwasher met sanitizing requirement. Temperature at dish surface was 71 C measured with probe thermometer.
-Walk-in cooler was at 4 C
-Glass door cooler out of order during inspection
-Chest freezers were -17C and -18C
-Upright freezer -15C
-Rice was being hot held at or above 60 C
-No signs of pest activity noted during inspection. Pest control devices on-site

Note:
Fire suppression system required service March 2018 - over due
Ventilation hood requires service August 2018, sticker is incorrect (Feb. 2018). Operator has service booked for this month.
-Vent hood panels cleaned weekly (Sundays)
