Observation (CORRECTED DURING INSPECTION): 0ppm of chlorine was achieved at plate level for low temperature dishwasher. Container of sanitizer for low temperature dishwasher was empty. A empty container was replaced, the dishwasher was re-primed, and a concentration of 100ppm was achieved. Ensure chlorine test strips are used daily to ensure low temperature dishwasher is in good working order.
Ensure to store all wiping rags in the chlorine santizing solution when they are not in use.

Observation: Rodent activity noted in the kitchen. 1 live mouse was caught in 1 of the 6 mouse traps that were checked. Old rodent droppings were noted in 1 of the shelving unit by the prep-cooler. Operator is on a biweekly service contract with a pest control company. Pest reports were available. Rodent droppings were removed and the area was cleaned at the time of inspection. Operator is to maintain an active contract with a reputable pest control company. Frequent service by pest control company is required until the rodent problem is rectified. Ensure to keep all pest reports on-site. The pest reports must document the level of pest activity and recommendations/corrective actions that need to be taken to rectify the pest problem.
