Observation: Probe thermometer was not available on-site to check internal temperature of food during hot-holding and cooking processes.

Observation: Interior surfaces of ice machine had accumulating debris present.
Correction: Do not use this ice until the ice machine is maintained in a sanitary condition; Correct immediately. Drain the ice and clean and sanitize the interior surfaces of the ice machine in accordance with the manufacturer's directions; Correct today.

Follow up inspection:
-Interior of ice machine had been cleaned and sanitized. Ensure ice machine is regularly checked for cleanliness and it is cleaned and sanitized in accordance with manufacturer's directions to prevent debris and mould from developing in the future as well.
-Both handsinks were properly supplied with liquid soap, hot and cold running water, and single-use paper towels.
-Person in Charge was observed washing her hands after completing a cash/credit transaction and prior to heating food at the grill. Ensure to continue good handwashing practices between different activities, prior to handling food contact surfaces, and prior to handling or serving food to protect food from potential contamination.
