Observation (CORRECTED DURING INSPECTION): One container of fried meat located in hot holding unit measured 40 to 45 degrees C (internal food temperature).
Corrective Action(s): Above-noted food was reheated to an internal temperature of at least 74 degrees C then placed back into hot holding unit. Hot holding unit was adjusted to higher holding temperature. Ensure all hot potentially hazardous food is maintained at 60 degrees C or more in order to limit the growth of potential pathogens.

Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer tested at 50 ppm chlorine in one spray bottle.
Corrective Action(s): Discarded. Bleach water sanitizer was remade and measured at 100 to 200 ppm chlorine. Ensure that at all times, food contact surface sanitizer (e.g. bleach water) is maintained at concentrations required for effective sanitizing of food contact surfaces. Recommendation: Obtain test strips to verify concentrations.

Provide scoops with handles to limit direct contact with food and store scoops appropriately (i.e. with scoop handles outside of food product). Note: Some scoops with handles available on site and in use.
