209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Found some food containers not covered in the walk-in-cooler (paneer, cauliflower, sauces). All foods must be covered to prevent debris dropping in them. Staff explained that the sauces and cauliflower was completing the cooling steps.
Corrective Action(s): Immediately cover all food containers with a lid, saran wrap or aluminum foil. During the inspection, staff covered all foods.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1) Black garbage bag was being used to cover dough. Garbage bags are not made of food grade plastic, chemicals from the plastic will contaminate any food it touches.
2) Black cloth has been installed on a shelf to prevent food splashes onto clean dishware. The black cloth is not cleanable and accumulated food on the cloth will attract pests.
Corrective Action(s): 1) Immediately stop using garbage bags to cover or store food. Only use food grade materials (saran wrap, aluminum foil, lids, glass, stainless steel, hard plastic, etc.) to cover and store food in. At time of inspection, staff discarded the garbage bag.
2) Immediately remove the black cloth and install a material that is food grade, durable, sealed and cleanable (plexiglass, stainless steel, glass, FRP, etc.).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The faucet in the front buffet area was not secured or sealed to the counter top, and the hot water tap was not able to open/close the water consistently. Staff are unable to wash their hands correctly.
2) The door handle to the staff washroom, was secured with tape. Tape is not durable, sealed or cleanable.
Corrective Action(s): 1) Repair or replace the faucet so it is secured and sealed to the counter top, and the taps work correctly so hot and cold water can easily be turned off and on.
2) Repair or replace the door handle on the staff washroom, so the handle is secured to the door and can be washed and sanitized.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: The paint on the floor in the kitchen is lifting, peeling and/or worn away is areas. The floor is no longer durable, smooth, sealed or cleanable. This was mentioned in the previous inspection.
Corrective Action(s): Refinish/reseal the floor so that it is smooth, durable, sealed and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -10C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in cloth buckets had [Cl2] of 200ppm.
- Low temp dishwasher had rinse cycle [Cl2] between 50-100ppm.
- All foods stored in food grade containers; covered; date coded; labeled; foods stored in groups with raw proteins separate or below RTE foods; and food stored 6" off the floor on racks, shelves or platforms.
- General sanitation level is satisfactory. No signs of pests.
- FoodSafe certified staff present.

**A follow-up inspection will occur to ensure violations have been corrected**
