Observation (CORRECTED DURING INSPECTION): Glasswasher observed to have 0ppm chlorine residual in water. Unit is equipped with 6% chlorine sanitizer solution.

**Corrected during inspection** Glassware to be washed and sanitized using mechanical dishwasher as temporary solution.

Contact dishwasher technician to have unit assessed and/or serviced. Do not use unit until proper sanitizer solution is detectable at plate surface (100ppm chlorine or 12.5 ppm iodine). Clean and wash all glassware in working low temperature mechanical dishwasher.

Note: Previous inspection report stated this unit used iodine as sanitizer. If switching to bleach, the unit may need to be calibrated.

Observation (CORRECTED DURING INSPECTION): Kitchen-side handwashing sink (white sink beside three compartment sink) observed to be filled with dirty kitchen equipment (e.g. pots, dishes, pans) and soapy water.

Ensure the handwashing station is used for washing hands only.

Observation: 1. Pizza dough observed to be proofing under cloth.
2. Soda gun nozzle observed to have heavy build up.
Corrective Action(s): 1. Do not use cloth to cover food products as liquids will wick through the cloth and onto food. Additionally, cloth cannot be guarenteed to be sanitary enough for use on foods.
