Met with owner on-site and discussed the following: -Pest control for fruit fly (prevention) → use bleach and sanitize 2 compartment sink plus all equipment with use at the end of the day. -Use Quat for cleaning and sanitizing all the food contact surfaces. *Daily logs available - up-to-date *Back storage area - well-organized *Walk-in cooler - 3°C *Dishwasher → reached 187°F at the final rinse.
