Corrective Action(s): Desserts relocated to walk-in cooler (4 degrees C or less) at time of inspection. Ensure potentially hazardous foods are maintained at 4 degrees C or less in order to limit the growth of microorganisms (including potential disease-causing microorganisms and their toxins).

Observation (CORRECTED DURING INSPECTION): 1. No chlorine detected in rinse residual for low temperature dishwasher.
2. No food contact surface sanitizer available at time of inspection.
Corrective Action(s): 1. A 100 ppm chlorine sanitizer solution was set up in the third compartment of the three-compartment sink. Manual warewashing procedures reviewed. Equipment and utensils to be re-sanitized. Only single use containers/utensils are to be provided for dine-in at this time.
2. Ensure a food contact surface sanitizer is available at all times during operations at the correct concentration (e.g. 100 ppm chlorine bleach water) for safe and effective sanitizing of food contact surfaces. A 100 ppm chlorine bleach water solution was prepared at time of inspection in a labeled spray bottle.

Observation (CORRECTED DURING INSPECTION): No paper towels and no liquid soap available for front service area handwashing station.
Corrective Action(s): Paper towels and liquid soap supplied. Ensure all handwashing stations are accesible and supplied with hot and cold running water, liquid soap, and paper towels in order to facilitate proper hand washing.

Corrective Action(s): 1. Ensure dishwasher is in good working order and is capable of providing a minimum sanitizer rinse residual of 50 ppm chlorine at the utensil surface in order to sanitize equipment and utensils. Have dishwasher serviced as necessary to meet this requirement. Date to be corrected by: July 21, 2023.
2. Ensure the above-noted coolers are capable of maintaining potentially hazardous foods at 4 degrees C or less in order to limit the growth of microorganisms (including potential disease-causing microorganisms and their toxins). Have coolers adjusted or serviced as necessary. Note: Limited food storage in upright cooler (non-potentially hazardous foods). A tray of sauces (refrigerate after opening) was discarded by operator. Date to be corrected by: July 24, 2023.
