Observation: One metal insert full of spaghetti and meat sauce was measured at 10.5C in the centre inside walk-in cooler. Staff stated clients or other staff members might heave gotten into the kitchen and took food which caused the lid on the spaghetti container to be fully closed instead of slightly ajar.
Corrective Action(s): Since the spaghetti was stored in the wak-in cooler since the day before, it was discarded during inspection. Ensure all food items are cooled in shallow containers with lids slightly open to let out the heat.
