Observation (CORRECTED DURING INSPECTION): At the time of inspection no approved food contact surface sanitizer available for use in the kitchen.
Corrective Action(s): Ensure during operation a 100ppm bleach sanitizer solution is prepared and available for use. Store all wiping cloths in this solution when not in use. If transferring to a spray bottle, ensure spray bottle is labeled identifying contents.

Routine inspection:

Hand sink provided with liquid soap and paper towels.
Dishwasher registers 75 degrees C at the plate surface during the final rinse cycle.
After correction, 100ppm bleach sanitizer solution available for use.
Preparation cooler inserts at or below 4 degrees C. Under the counter section at 3 degrees C. Note: yogurt in insert with no in ice bath or kept under refrigeration. Only small quantity is left out for busy times. Any leftover after 2 hours must be discarded.

Upstairs freezers at or below -18 degrees C.
Downstairs area no evidence of pests at time of inspection.
