Observation: No Sanitizer being used in the kitchen. Staff observed wiping knives and cutting boards down with wet cloths
Corrective Action(s): Santizer must always be used and knives should be washed in the dishwasher after use not wiped and placed down the crack between two coolers.
Immediately make up a sanitizer solution either of bleach or quats.
Immediately wash and sanitizer knives in dishwasher.

Observation (CORRECTED DURING INSPECTION): All but 1 handsink at the bar, were blocked by equipment or other items.
Corrective Action(s): Ensure all hand sinks are free of items and have soap and paper towels in dispensers.

Observation: 1)Walk in cooler needs to be re-organized as raw chicken and pork was being stored above vegetables, sprouts and other ready to eat foods
2) Food being stored in open bags, on the floor and right beside back hand sink.
Corrective Action(s): 1) Always store raw meat on the bottom shelf to prevent cross contamination. Staff started re-organizing walk in during the inspection, must be completed by Monday June 26/23
2) Re-organize dry storage area to ensure all food is being stored in containers, up off the floor and away from sources of contamination such as the hand sink and the chemicals/cleaners by Monday June 26/23

Observation: Cutting boards in sushi area are being held up by raw wood
Corrective Action(s): Wood will absorb all moisture and cannot be cleaned and sanitized. Seal/paint the wood immediately or use the cutting boards as per their design directly on the counter. by Monday June 26/23

Observation: 1) Several spray bottles in the bar area have no labels at all.
2) Chemicals and cleaners being stored in the dry storage area
Corrective Action(s): 1) Ensure all spray bottles are labelled with their contents to prevent mistakes by Monday June 26/23
2) Move all chemicals and cleaners to under the 2 compartment sink and away from food. This will prevent chemicals from potentially leaking on food in the storage area by Monday June 26/23
