Observation:
1) Mould observed in ice machine.
2) Rice scoop stored in room temperature water
Correction:
1) Clean and sanitize ice machine.
2) Rice scoop must be stored in ice water. Scoop and container must be cleaned and sanitized every four hours and the ice water changed.

Observation: Prep cooler in the front area and in the kitchen area measured 10C and 15C respectively.
Correction:
1) Discard all potentially hazardous foods from these coolers
2) Repair or replace coolers. Ensure that they are able to achieve and maintain 4C.

CLOSURE ORDER RESCINDED

- brand new prep cooler installed in the kitchen, measures 4C (inserts) and 3C (below); new thermometer purchased
- prep cooler in front area measures 4C
- reminder: temperatures must be recorded twice daily
- soup is now being cooled in smaller containers in the walk-in cooler
- rice scoop stored in ice water
- ice machine being cleaned at the time of inspection
- attention still required for rodent droppings in downstairs storage area; continue to monitor and if problem persists, hire professional pest control
- reminder that no poisons are allowed in the facility, and only physical traps (sticky or snap traps)
