Observation (CORRECTED DURING INSPECTION): 1) Sharpening guard was found to have old food debris.
2) 3-compartment sink was set-up with sanitize in the middle compartment.
Corrective Action(s): 1) Ensure deli slicer is properly disassembled for cleaning and sanitizing after each use. Slicer was properly cleaned and sanitized at the time of inspection.
2) Ensure 3 compartment sink is set up for wash (1st compartment), rinse (2nd compartment), sanitizer (3rd compartment), followed by air drying.

Observation: A few rodent droppings were observed in the back area by the compressor (some of the droppings appeared to be fresh).
Corrective Action(s): Sanitize affected areas with a 1:10 bleach solution and monitor for pest activity. If pest activity persists, professional pest control services will be required.

Comments

-Walk-in cooler was at 4C; Pizza prep cooler was at 4C (inserts and bottom).
-Chest freezer was at -25C.
-No hot holding of pizza at the time of inspection.
-Temperatures are checked and recorded daily.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail was tested at 200ppm. Staff indicated pail is changed daily - pail needs to be changed every 4 hours (solution evaporates over time).
-Foods items generally stored off the floor and covered.
-Washroom clean and sanitary,
