Food preparation area:
-Both handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
-Walk-in-cooler (in the food store area), sweets display cooler, prep. cooler, under-the-counter cooler, and upright cooler were at or below 4 degrees C.
-Refrigeration units were equipped with thermometers.Two broken thermometers were removed however extra thermometers were available on-site.
-A probe thermometer was available on-site.
-2-compartment sink was supplied with hot and cold running water and drain plugs. 2-compartment sink dishwashing sign was provided to the Operator.
-100-200 ppm chlorine sanitizer was available inside two labelled spray bottles.
-Grease buildup was removed from the floor and sides of cooking equipment. Ventilation hood was in a clean condition.
-Extra garbage bags filled with waste on-site near the corner were removed.
-Person-in-charge has completed a FOODSAFE Level 1 course on March 21, 2019 based on a temporary certificate.
Food store area:
-Cleaning improvements were made.
-Freezers were at or below -18 degrees C.
-Walk-in-cooler was at or below 4 degrees C. Food products were covered in the walk-in-cooler.
-Pest control program via Citiwide pest control was in place. Pest control reports were dated August 19, 2019 and August 12, 2019. Snaptraps and glue board was in place.
-Backdoor had a screen in place.
-Hole in the wall near the other backdoor was sealed.
-Extra meat slicer was removed from the back storage area. |
