303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation (CORRECTED DURING INSPECTION): 0 ppm QUATS sanitizer was measured in the containers with wiping cloths, in the spray bottle, and from the dispenser. Staff stated that they were changing it every 2 hours, however 0 ppm QUATs was available from the dispenser. This of concern since the prep. surfaces, preparation utensils, and dining tables were not properly sanitized.
Corrective Action(s): 1) Staff manually diluted the QUATS from a second QUATS stock bottle to setup 200 ppm QUATS and re-sanitized prep. surfaces and dining areas during the inspection.
2) Make sure preparation utensil are sanitized in 200 ppm QUATS sanitizer since they were not previously sanitized.
3) Make sure QUATS test strips are available on-site and use them to verify that the QUATS sanitizer concentration is at 200 ppm.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hot running water was not available at the handsink next to the mop sink.
Corrective Action(s): Person in charge turned on the hot water supply at the mop sink (without running the water at the mop sink). This allowed hot running water to be accessible at the handsink. Make sure hot running water is always accessible at the handsink to enable hands to be washed for 20-30 seconds using hot running water.

Observation: Ice cream toppings stored in five dry storage containers lacked lids.
Corrective Action(s): Ensure toppings are kept covered in storage areas; Correct today. Repair/replace the covers/lids for the storage containers; Correct by February 14, 2020.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Faucet at the mop sink is leaking when turned on to allow access to hot running water. Turning off the hot water supply at this sink unit affects the hot water at the handsink next to it.
2) QUATS sanitizer dispenser was not able to dispense 200 ppm QUATS.
Corrective Action(s): 1) Repair the faucet to prevent the leakage; Correct within 2 business days.
2) Repair/re-service the dispenser to ensure that it is able to dispense 200 ppm QUATS; Correct within 1 week and contact the district E.H.O. for a follow up inspection. In the meanwhile, ensure the QUATS is manually diluted as per manufacturer's instructions on the label and checked with test strips to maintain it at 200 ppm.

Other handsinks were adequately supplied with hot and cold running water, liquid soap, and paper towels.
Both walk-in-coolers, under-the-counter cooler, and prep. cooler were at or below 4 degrees C.
One under-the-counter cooler was empty of food and was not plugged in. Do not store any potentially hazardous food inside this cooler unless it is maintained at or below 4 degrees C.
Walk-in-freezer and other freezers were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
No signs of recent pest activity were evident at the time of inspection.
3-compartment sink was supplied with hot and cold running water.
Ice machine and ice bin were in a clean condition.
Food storage areas were clean and organized.
Person in charge on shift had a valid FOODSAFE Level 1 certificate (expiration date: May 5, 2023) and a FOODSAFE Level 2 certificate.
Kay chlorinating sanitizer tablets for food contact surfaces were available to sanitize the ice cream dispensing equipment.
