Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Front cooler was at 4C.
-Upright refrigerator/freezer was at 4C/-11C.
-Prep cooler was at 2C (top) and 4C (bottom).
-Chicken was fried to greater than 74C.
-Hot holding was greater than 60C.
-Cooked chicken cooled in a rapid manner - cooled on shallow trays. Chicken was at 4C.
-Accurate thermometers present in cold holding units. Temperatures checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer dispenser tested at 200-400ppm.
-Quats sanitizer spray bottles and pails were labelled and tested at 200ppm. Sanitizer is changed every 2 hours. Quats test strips available on-site.
-Raw chicken cutting machine was found to be clean and sanitary. Slicer properly cleaned and sanitized after each use.
-General food storage practices good at the time of inspection. Raw meats stored separately from ready-to-eat foods.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operation. No signs of pests noted at the time of inspection. If staff move tin cat monitoring stations for cleaning, ensure monitoring stations are position so the door is adjacent to the wall.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and hot air dryer.
-FOODSAFE Level 1 equivalent valid until July 1, 2026.
*Health Permit hand delivered. Ensure permit is posted in a visible location.
