Observation (CORRECTED DURING INSPECTION): Lack of hand soap in back kitchen area. Hand pump appears to be jammed.
CORRECTED DURING INSPECTION - Temporary squeeze bottle was filled with liquid soap for hand washing purposes.

This area should not be used for storage of food or equipment.

EHO to confirm with floorplans where storage area was proposed during initial approval inspection.

- Rodent droppings observed in kitchen and cupboard at back
- Dead mouse in trap in washroom

Corrective Action(s): Discuss with pest control technician. Ask for recommendations for both pests.
Fruit Flies can be alleviated by cleaning spills immediately, trapping and cleaning drains. Remove any sticky beverage containers from facility. Rinse cans before placing in recycling
Discuss rodent infestation with Pest Control Company. Alert Pest Control Company of findings and follow recommendations advised by Pest Control Company Technician.

Email last inspection report from Pest Control Company to EHO to review.

Observation: Side door leading to exit corridor has large gap. All doors in hallway leading to other businesses have been rodent proofed. Exterior door leads to garbage and has large gap.
Cupboard has large amount of rodent droppings inside on shelves and floor.

Corrective Action(s): Obtain door sweep/skirt for this door. Ensure this door is tight fitting as this could be the source of rodent entry into facility.
Inspect cupboard for signs of entry or nesting. This area could be an additional entry into facility. Discuss with Pest Control Technician.

- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 71 (75) Degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- All food items covered in cooler and freezer units
- Common use items washed and sanitized frequently every 2 hours or more frequently as necessary - discussed with staff
- Hair restraints in use
- Back door closed during inspection
- Light covers in place
- All containers used to store lids/utensils/etc. in good sanitary condition
- Blenders in good sanitary condition - washed in dishwasher after each use
- Staff Personal items kept separate from kitchen equipment

NOTE: Sanitizer solution was higher than 200ppm Chlorine. Ensure Test strips are acquired and sanitizer is tested daily. 200ppm Chlorine.
