Observation (CORRECTED DURING INSPECTION): Equipment/utensils/food contact surfaces not maintained in sanitary condition.
Observation: dirty knives (2) and dirty vegetable cutter was noted on food preparation counters. Operator informed that the utensils are used between noon - 2 pm for preparation.
Correction: the dirty tools/utensils were moved to the dish washing area at the time of inspection. Ensure food contact surfaces are washed and sanitized after each use or every 2 hours.
Rationale: dirty equipment can encourage pathogen growth (in food debris) at room temperature. It can also attract pests such as flies, which can contaminate food and cause a foodborne illness.

All heandsinks adequately equipped (including washroom) with hot/cold running water, liquid soap, disposable paper towels.
Spray bottles (2) had 200 ppm QUATS solution.
3-compartment sink was equipped with plugs.
Dough maker was in use at the time of inspection.

Storage
Overall storage practices very good.
Raw meats on the bottom shelves, chopped produce on top shelves.
Randomly selected food items were within the best before dates.

No signs of pests noted at the time of inspection.
