Observation: Observation:
1) Canned foods in dry storage area placed directly on the floor (Repeat violation).
Health Rationale: Foods can become contaminated if placed directly on the floor.
Corrective action: Store all food items off the floor (at least 6 inches) to prevent contamination.

2) Chemical (bleach) sanitizer used for food contact surfaces measured at >>>200 ppm chlorine (above maximum of 200ppm).
Health rationale: Bleach sanitizer used for food contact surfaces at concentrations above 200ppm can cause chemical contamination to food (hazardous).
Corrective action: Bleach sanitizer was replaced during inspection. Employees were educated on how to properly prepare bleach solution for food contact surfaces 1/2 teaspoon of bleach should be mixed with 1L of water to ensure concentrations of bleach is not too high and to reduce risk of chemical contamination.

Observed during inspection:
1) Temperatures:
-2-door stand up cooler #1 at 4C (back area)
-Sandwich cooler at 4C (top and bottom)
-Deli display cooler at 3C (top and bottom)
-Display cooler beside prep area at 0C
-Display cooler at front service area at 4C
-2-door stand up freezer #1 at -18C
-2-door stand up freezer #2 at -18C
-2 door stand up cooler at front area at 3C
-Operator checks temperatures daily
-Thermometers available in coolers

2) Sanitation:
-General sanitation - Good!
-High-temperature dishwasher reached 74C at plate level (final rinse temperature).
-Handsink in prep area, service area and staff washroom supplied with soap, paper towel, hot and cold water.
-No signs of pests during time of inspection.

3) Storage:
-All food is covered
-RTE meats separated from raw meats.
-All equipment is stored in a sanitary manner.

4) Administration:
-Foodsafe certification is verified.
-Operating permit visible during inspection.
