Observation:
- Heavy grease built up on the side of the deep fryers.
- Grease observed on the filter and the hood of the ventilation system, the service sticker marked on Sep 2022.
Corrective Action(s):
- Pull out the deep fryers, thoroughly clean all the sides.
- Contact the cleaning service for the ventilation system.

Comments

Routine inspection conducted with the presence of the manager.

- General sanitation was satisfactory.
- Hand sink in food handling areas and staff washroom fully equipped with liquid soap, hot and cold running water, and paper towels.
- Walk-in-cooler, under the counter coolers and all the prep coolers were at or below 4 C and were equipped with thermometers.
- Walk-in-freezer and upright freezer were at or below -18 C.
- Hot holding units for food (mashed potatoes, corn, beans, rice, chicken, beef, steak pieces, gravy etc.) was at or above 60 degrees C. Rethermalizer water temperature measured 86C.
- Ice machine was in sanitary condition. Ice scoop was stored in a clean bucket.
- 200 ppm QUATS sanitizer was available in dispenser and sanitizer pails with wiping cloths inside them.
- Dry storage area was clean and free of clutters.
- No signs of pest activity observed during inspection. Back door sealed tight.

Note: please send the new floor plan to District Health Inspector for approval when planning to do a renovation. Some areas need to take into consideration, for instance, add more hand sinks in the food processing area.
