Observation (CORRECTED DURING INSPECTION): Mandolin had dried carrots under the slicing blade.
Corrective Action(s): Ensure slicer is properly disassembled for cleaning and sanitizing after each use to prevent potential contamination of foods. Slicer was disassembled for cleaning and sanitizing at the time of inspection.

Comments

-Follow-up inspection to August 12, 2020.
-Sanitizer containers were properly labelled. Ensure containers are relabelled as needed.
-Cooked chicken was cooling in single layers in the upright cooler at the time of inspection. Chicken was recently cooked and cooled at room temperature, prior to transferring into the cooler. Cooler unit was at 4C.
-Wooden cutting board was replaced with a laminate cutting board. Ensure all surfaces are smooth, non-absorbent, and easily cleanable.
-General cleaning has been carried out to the facility. Did not observe rodent droppings in the facility. Continue to monitor for pests and contact pest control services as required.
-Storage of scoops has improved.
-Facility has stated to collect contact information for din-in patrons. Ensure the first and last name of each patron is collected along with their phone number or email address.
-COVID-19 worksafety plan posted at the front entrance.
-Please contact the inspector if you have any questions or concerns.
