Observation (CORRECTED DURING INSPECTION): 1) Diswasher not able to reach 71C water temperature at dish level in rinse cycle
2)Cleaning rags found sitting on prep counters. No sanitation solution made.
Corrective Action(s): 1) Have the dishwasher serviced so it is able to reach 71C water temperature at dish level in the final rinse cycle. (Closure Order Issued)
2) Ensure there is sanitizing solution available at all times and store cleaning rags in the santizer bucket when not in use.
Operator prepared a bleach solution tested at 100ppm at the time of inspection.

2) Ice machine has accumulation of mold inside in the unit
Corrective Action(s): 1)Ensure ready-to-eat food (vegetables) are stored ABOVE raw foods such as meat and fish to prevent potential contamination.
2) Remove ice fron the ice machine. Clean and sanitize in inside of the unit.

Observation: Equipment not required for operation stored in the kitchen and need to be removed.
Premises are cluttered and need to be organized to allow for cleaning and maintain overall cleanliness.
Corrective Action(s): Immediate cleaning is required in the following areas:
1) Fan covers in the standup cooler
2) Floor throughout the whole facility including the dry storage area
3) Ceiling in the kitchen and dishwasher
4) Around and under all equipment and shelving units - including dishwashing area
5) Storage cooler shelves
6) Exterior of paper towel dispeners and soap dispensers
7) All walls - remove black mould-like substance from walls
8) Remove all cardboard used to line shelves or as storage

Closure Order issued for dishwasher - Call inspector for follow-up inspection after unit has been repaired and is able to maintain 71C at plates surface and 82C at the gauge.

Walkin cooler was being serviced at time of inspection and was turned off. Temperature tested at 4C. Before completing inspection, the walk-in cooler was up and running at 4C again. In the future, ensure servicing of units occur when facility is closed.
