Observation (CORRECTED DURING INSPECTION): Chicken meat sitting at 7C in a bucket under the counter. Ensure to package move them into refrigeration unit as soon as possible to reduce the time sitting at room temperature.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Meat prep room: handwashing stations (accessible through the walk-in cooler) had soap dispensers that were not working. Paper towels were not stocked at one of the stations. No hot water found in this room at time of inspection. Staff was notified and liquid hand soap and paper towels were provided at time of inspection.
Deli packaging room: The handsink had no immediate waste bin provided. Staff was notified and a waste bin was provided at time of inspection.

Observation (CORRECTED DURING INSPECTION): Packages of chicken thawing in water at 9.4C and 7.9C in walk-in cooler. Room temperature was 8.0C. Digital thermometer for the room reading 48F (above 4C). Chicken must be thawed at 4C or below. Operator will change the water and adjust the temperature of the room to 4C or below.

Observation: Rodent droppings observed underneath the pallets and along the walls near the entrance overhead doors.
Corrective Action(s): Clean the floors in the walkways. Move all of the pallets out and clean and sanitize the floors under the pallets and along the walls of the floors using 100ppm bleach. Move all of the pallets back to original position.

- In the warehouse area, right outside the walk-in freezer
- Bandsaw is cut inside the bigger cooler. Bandsaw stored in warehouse and is cleaned by end of day. Reminder that equipment should be cleaned 4 hours after use or more often.
