Observation: Area below mop sink observed cluttered and dirty. Stagnant water pooling around chemical containers and other containers.
Do not use cardboard as method of maintaining control of greases under and around deep fryer. Food accumulating around.
Corrective Action(s): Make sure area below mop sink is cleaned and better maintained in future.
Remove cardboard and make sure staff clean this area more thoroughly/regularly.

Dishwasher at 76 C.
Cooling units all less than 4 C. **Monitor front prep cooler and make sure it maintains proper temperatures at all times. Unit was possibly cycling to defrost?
Handwash stations stocked and OK.
**Jay cloths observed hanging on shelves in prep area. Cleaned, but dripping onto equipment and food below. DO NOT DO THIS.

Discussed food poisoning complaint. Not likely from this premises, but make sure staff wash hands often and don't work when sick.
