302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer in spray bottle was too strong. Solution bleached out test strip. Spray bottle was also unlabeled.
Corrective Action(s): Bleach sanitizer at 100ppm to 200ppm is required for sanitizing food contact surfaces. Concentrations in excess of 200ppm is not considered food grade. Bleach was diluted to 200ppm at the time of inspection. To mix 100ppm to 200ppm bleach add 5mL of bleach to 1 liter of water. Ensure sanitizer spray bottle is relabelled as needed.

Observation: Scoops were found stored in dry ingredients, tomato sauce, and chopped onions.
Corrective Action(s): Ensure all scoops are stored in a sanitary manner to prevent handles and base of containers from potentially contaminating foods.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris was found on the shelving units in the walk-in cooler, on the walls, and along the floors. A couple old rodent droppings was also found in a storage closet area.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times to prevent potential pest infestation. Clean facility at the end of the night and not the next morning. Ensure droppings in closet area are disinfected with a 1:10 bleach solution and remove droppings – monitor for future pest activity.

Observation: Pizza prep cooler door seals are torn and need to be replaced.
Corrective Action(s): Replaced prep cooler door seals to prevent loss of cold refrigeration air and to prevent build up of food debris.
Correction date: 1 month.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 3C (top and bottom)
-Chest freezer was at -22C.
-Facility does not hot hold pizza.
-Cooler units equipped with accurate thermometers and temperatures are checked and recorded daily.
-3-compartment sink used for cleaning and sanitizing. Sink was being prepared at the time of inspection (facility just opened for the day) and was tested at 100ppm.
-Two bleach sanitizer pails prepared in the front area were labelled and tested at 200ppm.
-Both handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Facility is serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-Food items stored off the floor and covered.
-Washroom clean and well maintained.
*FoodSafe Level 1 certificates issued prior to July 29, 2013 (do not have expiry dates) will expire on July 29, 2018. In order to meet the FoodSafe requirement, certificates must be valid/not expired.
