Observation (CORRECTED DURING INSPECTION): 1. Dishwasher had a final rinse of 69 C at plate and 180 F at the gauge, wash temperature was 156 F.
2. Wiping rags and spray bottles had >200 ppm chlorine.
Corrective Action(s): 1. Have dishwasher repaired so the wash temperature is at least 160 F and findal rinse is 180 F at the gauge and 71 C at the plate. Soak dishes in 200 ppm chlorine for 2 mins until dishwasher has been repaired.
1. Chlorine sanitizer should be 100 - 200 ppm. 1/2 tsp chlorine per litre water.

Observation (CORRECTED DURING INSPECTION): Hand sink by mop sink was completely blocked at time of inspection.

Observation: 1. Found boxes of vegetables sitting on the floor in the back hall way, and bags of rice on the floor in the dry storage area.
2. Found wontons in the freezer uncovered, and multiple containers with out lids in the up right coolers.
3. Found food left inside opened can inside of the sandwich cooler.
4. Found bowls sitting on top of food in the sandwich cooler.
Corrective Action(s): 1. Must keep all food inside approved kitchen and 6" off the floor.
2. Must keep all foods covered when put away.
3. Do not leave food inside opened cans, place into reusable containers.
4. Do not stack bowls or containers with food unless it is covered (lid, plastic wrap, or tin foil).
