Observation: Potato chipper found to be stored with large amounts of food debris stored in crevices. Item was not washed previous day and left dirty overnight.

Rodent droppings found on shelves of bar area where peanut butter is stored.

Corrective Action(s): Ensure potato chipper is cleaned and sanitized daily. Item should not be stored in dirty condition overnight.
Rodent droppings are to be removed and area cleaned and sanitized immediately. All pans and utensils are to be pulled from lower shelves and run through dishwasher prior to placing back on shelves.
Clean shelves in bar affected by rodent droppings.
Use 200ppm Chlorine or equivalent.

- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Appropriate Test strips available for use
- Common use items washed and sanitized frequently every 2-4 hours or more frequently as necessary
- Hair restraints in use - Hair Nets
- Back door closed during inspection and tight fitting
- Pest proof containers for all dry storage items
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Thermometers in all cooler and freezer units
- Temperature records maintained

NOTE: Many observations of broken equipment including: coolers, dry storage containers, shelving, walls, floors, etc. however facility will be closing very soon. If facility is to remain open for some reason past the date for demolition of the property upgrades will be required.
