Observation (CORRECTED DURING INSPECTION): Observed accumulation of dried food debris in a slicer's sharpening guard. Operator directed a staff to initiate cleaning process. Ensure clean-in-place equipment are fully disassembled before cleaning.

Observation: Observed accumulation of dried goods (e.g., rice grains, chocolate chips, etc.) in the back dry storage floor.

Observation: Observed water dripping from a drop ceiling. Operator explained the leaking is from pipe condensation. Work order is already in place. Food contact surfaces are relocated away from the dripping water.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less.
All freezers measured at -18C or less.
Appropriate cooling steps observed.
High temperature dishwasher's sanitizing cycle measured at 74.9C at the plate level.
General food storage practice is adequate.
QUATS sanitizer measured at 200 ppm as per test strips. Test strips available.
