209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Sliced bacon observed on a plate with paper towels inside the bottom compartment of the prep cooler.
2. Sliced bacon in walk-in cooler stored above feta cheese container.
Corrective Action(s): 1. Sliced bacon in prep cooler was moved to a new Ziploc bag. Always store food products in food-grade containers.
2. Sliced bacon was moved separately from the feta cheese. Do not store raw meats above ready-to-eat foods.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Painted wooden shelving in the dry storage area and underneath the coffee machine are starting to degrade.
Corrective Action(s): Wooden shelving is to be refinished / replaced with wire shelving so that it remains smooth, easy to clean, and impervious to moisture. Exposed wooden shelving will eventually decay over time.

Observation: Stand-up freezer and walk-in cooler / freezer lack a thermometer.
Corrective Action(s): Obtain a thermometer for the freezer, walk-in cooler, walk-in freezer.

Comments

Routine inspection conducted. Area is in satisfactory sanitary condition; however, there is a variety of clutter that will need to be removed (see below).

1. Temperatures
- Walk-in cooler at 2C
- Walk-in freezer at -12C
- Exterior stand-up white domestic freezer at -10C
- Beverage cooler at 6C
- Prep cooler (bottom) at 0C
- Prep cooler (top) at 4C
- Temperature logs have NOT been recently maintained - you must ensure that you regularly maintain temperature logs to verify that your equipment is functioning properly

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels in kitchen area and restrooms
- Sanitizer spray bottle available at 200 ppm chlorine residual
- High-temperature dishwasher sanitizes at a final rinse cycle temperature of 72C at the plate (Min: 71C)
- Pizza knives, tongs, cheese grater will be cleaned and sanitized every 2-4 hours
- Meat slicer stored in good sanitary condition
- Exhaust hood above the pizza oven in good sanitary condition
- Restrooms generally well maintained

3. Storage
- All food products noted at least 6" off the floor
- Operator has now removed the malfunctioning soda fountain dispenser - good

4. Pest Control
- No recent, visible signs of pest activity at time of inspection

5. Administrative
- Owner and employee-on-site has FoodSafe 1 (after owner leaves premise)
- Permit posted and up-to-date

6. The following also require your attention:
- Clutter is still present in the following areas: in the walk-in freezer, underneath the 3-compartment sink. Please note that all unnecessary items on premise must be removed (e.g. old recyclable cans, old cardboard boxes)
- Drywall to the left of the dishwasher has been damaged. Please have the drywall repaired by September 4, 2019
