**Discussed with operator on the phone having proper cold-holding equipment available at temporary events for items requiring cold storage, such as Jamaican patties and samosas. Even if previously cooked and frozen, potentially hazardous foods must be held at 4C or colder until they are reheated for service. When food will be handled/processed at temporary events, such as during reheating, a handwashing station equipped with liquid soap and paper towels must be available at the temporary booth/tent set-up.

Inspection findings
- Hand sink in production area and washroom supplied with hot and cold running water, liquid soap, and paper towels. **As noted on previous inspection report, the paper towel dispenser must be in use. Ensure to purchase the correct paper towels for the dispensers installed.
- Quat sanitizer solution available at 200 ppm
- Three compartment sink available for manual warewashing. Sink plugs available
- Walk-in cooler measured to be at 3C
- All freezers measured to be below -18C
