Corrective Action(s): It is recommended that fly strips (or similar fly control measures - e.g. a fly light trap) be installed in this area, particularly during Summer months. Ensure any traps are not located directly over food preparation/handling areas. If problem worsens, contact professional pest control for treatment.

*General sanitation satisfactory.
*Hand sink (two-compartment sinks) equipped with hot/cold water, liquid soap and paper towels.
*Quat sanitizer available at 200ppm in spray bottle. Discussed use of cloths with staff member on site - ensure any cloths that will be used more than once are rinsed out, then stored in sanitizer between uses.
*Steambath for hot dog cooking measured at > 71 C. Hot dogs are cooked in this unit prior to placement in warmer.
*Hot dog rolling warmer unit measured at > 60 C.
*Cooler temperatures measured at 4 C or colder (including insert trays in line cooler). Freezer temperature satisfactory.
*Sandwiches are made fresh daily.
*Temperature logs kept up to date.
*Food protected from contamination - wrapped/covered and stored off the floor.
