Observation (CORRECTED DURING INSPECTION): Mounted vegetable dicer observed to have built-up of food debris. THIS IS A REPEAT VIOLATION.
Corrective Action(s): Clean and sanitize the vegetable dicer after each use. Disassemble the unit prior to cleaning and sanitizing.

Observation (CORRECTED DURING INSPECTION): Built-up of food debris observed to be underneath the gas stove and major cooking equipment. THIS IS A REPEAT VIOLATION.
Corrective Action(s): Clean and sanitized the aforementioned area. Follow Sanitaiton Plan submitted.

Follow-up Inspection for report#JCHY-CDESKQ.
All the following violations/concerns have been corrected in report#JCHY-CDESKQ.
-Food in the prep coolers observed to be covered with plastic wrap.
-Food in the walk-in freezer observed to be stored at least 6 inches off the floor. Walk-in cooler and prep coolers measured at 4C or lower. Walk-in freezer measured at -18C.
-Ice machine observed to be serviced. No pooling of water observed around the ice machine. Built-up of ice in the walk-in freezer observed to be cleared.
-Concerns from previous inspector of the submitted Food Safety Plan have been addressed in email.
-Ice cream scoop observed to be stored in dipper well.
-QUAT dispenser installed.
-Thermometer purchased to monitor cooking temperature.

All handsinks well equipped with hot and cold running water, liquid soap, and paper towels.

NOTE: Ensure that pots of chick peas are at 60C or higher when hot-held.
