Observation: 1 cockroach noted under the hand washing station in the kitchen area and 1 cockroach noted in the back storage area between the standup cooler.
Corrective Action(s): Operator stated that a pest control company has been hired to help rectify the problem. Ensure the pest control company provide the following:
- Pest report indicating the severity level of the problem and the remediation actions taken.
- Setup monitoring traps.
- Apply chemical treatment appropriately.
- Help identify potential entry points: cracks in the wall/baseboards, t-bar ceiling, door entrances, etc.

Observation: Accumulation of old food debris is noted in the following areas:
- On the floor of the back storage area
- In some of the under-counters in the kitchen.
- On the walls in the kitchen.
Corrective Action(s): Ensure facility is thoroughly cleaned on the routine basis.

Comments

Routine inspection conducted and the following were noted:
All cooler units at 4C
Hot holding of food on the buffet table were at least 60C.
Chest freezer at -18C.
Chlorine dishwasher achieved a final rinse concentration of 100ppm. Chlorine test strips available.
Hand washing satisfactory.
3-compartment sink satisfactory.
Food items stored at least 6 inches off the ground. All dry products in the back storage area should be stored in a sealed rodent proof container.
