Prep cooler was measured to be 3C. The prep cooler measured 38-39F for the past week as per the temperature log.
Line cooler was measured to be 2C. Food items in the line cooler was organized, not overstacked.
The temp. log indicated 37-39C in the line cooler for the past week.
QUATS solutions used for food contact surface was measured to be 200ppm (Both in rag buckets and a spray bottle)
Accumulation of grease behind the grease trap has been removed and cleaned
