-Provide Fraser Health with the invoices for the salmon and tuna used for sushi to confirm that they have been flash frozen. All coolers were < 4 C. Soup is hot held at 60 C. Quats sanitizer solution was at 200 ppm Hand sink supplied with hot and cold water, soap and paper towels. Vinyl gloves in use. General sanitation was satisfactory.
