Observation (CORRECTED DURING INSPECTION): Foods on hot holding table were not consistently at 60 degrees Celsius or more.
Corrective Action(s): Some food items were found to be above 70 degrees Celsius and some were around 50 degrees Celsius. Hot holding unit is equipped with only one temperature control knob. Informed operator that when business is slow, the foods need to be covered to ensure they are all at 60 degrees Celsius or higher. Operator provided covers for all foods and also increased the temperature slightly.
