Observation: - Grease build up noted on side of proofer and on floor between proofer and prep table
- Grease/grime noted on floor around legs/wheels of equipment
- Debris noted on edges of floor under equipment, prep tables and shelving units.
- Cover on grease trap is slightly ajar and there is a gap noted with bad odour pre
Corrective Action(s): - Move all moveable equipment out to thoroughly clean/scrub hard to reach areas of the floor noted above to remove all grease and debris. To be completed by:
- Clean side of proofer to remove grease accumulation
- Place cover properly on grease trap so that it is covered tightly.

Comments

- Handsinks in food preparation area and staff washroom supplied with hot and cold water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- Walk-in cooler 1C
- Line cooler 1C
- Self serve beverage cooler 2C
- Sliding door beverage cooler 3C
- Single door reach in cooler 3C
- Walk-in freezer -21C
- Single door undercounter freezer (chicken wings) -19C
- Hot holding unit was 63C (no food inside at time of inspection)
- Temperatures of cold holding units are checked 4 times daily with readings entered into online monitoring system (Hutbot)
- High temperature dishwasher operational and met sanitizing temperature. Final rinse was 71.9C at dish surface (measured with min/max thermometer)
- Quats sanitizer available from dispenser at warewashing sinks and in buckets with in use wiping cloths. Concentrations checked and were 200ppm.
- Pest control contract in place with monthly service. Viewed most recent pest control report from service in 09-Aug-2022. Report reviewed - ensure all recommendations of Pest Control Technician are completed. Report indicates holes near grease trap have been filled with wire mesh and should be properly repaired - ensure this is completed.
- Foodsafe requirement met at time of inspection. Manager present and has valid Foodsafe level 1 certificate.

Observations and required corrective actions reviewed with Manager and a copy of the report was provided.
