Observation (CORRECTED DURING INSPECTION): Concentration and volume of Quats sanitizer for in-use wiping cloths at the bar were inadequate.
Corrective Action(s): Quats sanitizer concentration was found to be 50ppm as per Environmental Health Officer's test strips. Concentration needs to be 200ppm. Additionally, the volume of quats santizer in the bucker was no suffcient to fully submerge the wiping cloth. Manager corrected at time of inspection. Discussed with manager about making sure all staff follow White Spot's policy on the use of quats sanitizer for wipng cloths.

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding units were over 60 degrees Celsius.
Food storage practices were good.
Organization of storage areas was satisfactory.
Staff hygiene and food handling practices appeared satisfactory.
Hand sinks were stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation was satisfactory.
Quats sanitizer in buckets for the other stations and spray bottles were 200ppm.
Low temperature dishwasher had a chlorine sanitizer residual concentration of 100ppm.
Chemicals were stored in a safe manner.
No signs of pests.
