Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher is broken, it is reported to be broken for a couple days.
-Manual dishwashing is not properly done
Correction: -Repair dishwasher as soon as possible
- In the meantime manual dishwashing to be done by: 1. wash with detergent and hot water 2- rinse clean water 3 soak in bleach solution (100 ppm) for at least 2 min 4 air dry
-Facility has only 2 compartment sink and a large utility sink in the back- 3 step can be done in utility sink and one of the metal shelving unit in the back to be used as a drying rack

All issues are addressed, Dishwasher temp reaches 71 oC at plate. Food handlers hair is controlled.

** Rodent dropping noted in storage room: clean and monitor for any activity- contact a pest control professional as needed.
