Observation: Handwash station at raw chicken battering station does not have paper towel dispenser. This is a critical handwash station and staff should not have to walk to an alternative station.

Comments

Noticed flour and greases on arm to dishwasher suggesting staff are moving from station to station without following good handwashing procedures and/or glove use. Make sure that if cross contamination occurs staff clean and sanitize the area right away.

Make sure to clean all parts of dishwasher (arm, door and door slides, and hard to reach areas) on daily basis, and descale/degrease unit inside and out at a frequency that minimizes build up.

Make sure mop buckets clean when not in use, and mops are stored hanging as discussed.
