Observation (CORRECTED DURING INSPECTION): Scooping bowl was stored inside ingredient bag.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Bowl was removed at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Bottom Coca Cola refrigerator was at 7C to 8C. Cooler was used for the storage of sprouts and non-potentially hazardous foods.
Corrective Action(s): Do not use the cooler unit for the storage of potentially hazardous foods until it is able to maintain 4C or less on a consistent basis. Sprouts were moved to a functioning cooler at the time of inspection.

Comments

-Prep cooler was at 4C (top and bottom).
-Upright cooler was at 4C.
-Front under counter cooler was at 4C.
-Top Coca Cola cooler was at 4C.
-Upright freezer was at -18C (right side). Left freezer unit was being replaced at the time of inspection. Foods have been moved to the adjacent freezer and cooler units.
-Hot holding was greater than 60C.
-Sushi rice had a pH of 4.0.
-Cooked chicken was cooling in the prep cooler in single layers on a large metal tray (made today).
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach was at 100ppm.
-Bleach sanitizer spray bottles were labelled and tested at 100ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General sanitation good at the time of inspection. Exhaust canopy was found to be clean and sanitary.
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until September 08, 2023.
