Comments

-Walk-in coolers were at 4C and 3C.
-Display coolers ranged from 3C to 4C.
-Prep cooler (left side) was at 4C. Prep cooler (right side) is in the process of being replaced.
-Customer area coolers were at 4C.
-Upright freezer was at -10C.
-Temperatures are checked and recorded twice daily for cold holding units.
-Hot holding cabinet ranged from 50C to greater than 60C. Items are discarded after 4 hours in the display case. If facility is to use the 4 hour rule for storage of potentially hazardous foods, records must be kept regarding when the food goes into the hot holding unit and when the items are discarded.
-Cooking temperature checked for each batch of chicken.
-3-compartment sinks Quats dispensers were at 200ppm (closest to bakery) and 400ppm (by the raw chicken cooler). Operator contact a technician to decrease the Quats concentration at the time of inspection.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods properly stored off the floor and protected from contamination. Raw foods stored separately from ready-to-eat foods.
-Deli slicers are cleaned and sanitized every 2 hours.
-Facility monitored by a professional pest control operator monthly. No signs of pests noted at the time of inspection.
-General sanitation satisfactory at the time of inspection.
