Observation: Area below and behind bread divider very dirty. Observed with accumulations of bread oil?, flour and other material. Partially submerged rodent trap alson observed. Machine leaking?
Corrective Action(s): If machine is leaking fix; Or make adjustments such that the floor does not suffer accumulations of oil and the area can be properly cleaned and maintained.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Reviewed proofer/cooler correction from previous inspection. Observed parts of unit remain with exposed and peeling paint which can contaminate food product.
2) Wood trolley(s)/Dolley's deteriorated and not easily cleanable. In poor condition.
3) Black plastic shelving units in walk-in cooler not easily cleanable and dirty.
Corrective Action(s): 1) All exposed walls door frame and door must be finished with stainless steel as per original repair.
2) Remove and replace wooden dolley's and trolley's as discussed.
3) Remove and replace with proper easily cleanable and durable shelving (Stainless steel wired shelves best)

Floor of walk-in cooler #1 better.
Walk-in cooler #2 new incomplete. looks good. Ensure temperatures can maintain 4 C. or less prior to using.
New Freezer measured - 14 to - 15 C. looks good. Make sure staff clean floor at frequency to prevent food accumulations.
handwash stations good.
Noted new potable water station in packaging area for staff. Good.

Pest control and continued improvements to physical plant ongoing.
