Observation (CORRECTED DURING INSPECTION):
The cooler storing "resting" dough was 10C. The dough has beef suet in it, thus it is a potentially hazardous food that must be stored at 4C or colder at all times to prevent growth of pathogen.
Corrective Action(s):
Decrease the temperature of the cooler so it remains below 4C at all times. Move the thermometer to the lower shelves in the cooler to get a "worse case scenario" temperature reading. During the inspection, the operator decreased the temperature.

Observation:
General sanitation level is adequate, but accumlation of flour on outside of food containers and shelves observed. This will attract pests.
Corrective Action(s):
Clean the outside of food containers, and remove all items off shelves and clean. Increase the frequency at which this is done.

Observation:
There is a large number of extra and unused baking sheets and other equipment being stored below the large, central wooden prep table. These items haven't been used and are accumulating flour and dust.
Corrective Action(s):
Sell, remove, donate, or discard these items so they do not have to be cleaned routinely, and/or accumulate dust.

Comments

A routine inspection was conducted, the following observations were made:
- Freezer was -11C; cooler was 10C (temperature adjusted during inspection); thermometers present; temperatures monitored daily but not recorded.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach present for sanitization, but no solution present during inspection.
- Food storage done correctly. All foods stored 6" off the floor; in food grade containers; covered; and in groups with animal proteins on lowest shelf below RTE foods.
- No expired foods in use. FIFO rules followed.
- General sanitation level is satisfactory. Improvement needed in mentioned areas.
- No signs of pests. Old mice dropping observed on wood pallet by door. Discard pallet and sanitize the floor beneath it.
- FoodSafe certified staff present.
- Discussed plans for expansion in the neighboring unit. Submit floor plan drawing of the new unit and the existing unit showing how each unit will be set up. Once approval of the floor plans is obtained by our office the City, changes can begin.
