301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation:
Grease accumulation was observed in the grates of the vents/exhaust canopy over the cook line. Grease was observed dripping on the wall. Vents are due for service on May 20th, 2023. Operator stated that vents are going to be serviced on the weekend (June 3rd/4th).
Corrective Action(s):
- Remove the grates and clean it. (Date to be corrected: Same Day, June 7th, 2023)
- Have the vents serviced.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
In-use wiping cloths were stored on the food preperation counters. Staff was observed to use the wiping cloths without putting it back in the sanitizer bucket. Chlorine test strip was used and there was no detectable chlorine residue (0 ppm) at the wiping cloth.
Corrective Action(s): Store all in-use wiping cloths in the chlorine sanitizer bucket at all times.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION):
Staff was observed to wipe hands with in-use wiping cloths, did not wash hands and handled food right away.
Corrective Action(s):
Ensure to properly wash hands before handling food. Staff was educated about proper handwashing procedure.

304 - Premises not free of pests [s. 26(a)]
Observation:
1.) Mouse droppings were observed in the following areas:
- Under the dry storage shelf at the back of house near the 2-compartment sink and mop sink
- Under the front of house hand sink station

2.) 2 Live cockroaches were found behind the High temp dishwasher and along the floor coving spaces

Pest control report (May 8th, 2023) noted that live cockroaches were "noticed". No recommendations given to the operator..
Corrective Action(s):
1.) Clean and sanitize the droppings and the noted areas above (Date to be corrected: Same day, May 31st, 2023)
2.) Seal the spaces along the floor covings and tiles (Date to be corrected: June 7th, 2023)
NOTE: Ensure to maintain proper sanitary condition in the premises to prevent the attraction of pests like rodents and cockroaches.

Observation (CORRECTED DURING INSPECTION):
Food containers were being stored on flattened dirty cardboard boxes.
Corrective Action(s):
Discard cardboard boxes because it's not suitable for proper cleaning purposes. Store food containers on smooth and easily cleanable surfaces.

Comments

GENERAL COMMENTS:

*Sanitation and Hygiene:
- All hand sink stations were adequately supplied with paper towels, liquid hand soap, and running hot and cold water.
- High temperature dishwasher had a final rinse temperature of 77.3C at the plate surface.
- 2-compartment sink was available and 2 functional sink plugs were also available.
- Chlorine sanitizer buckets measured 200 ppm.
- Adequate supply of bleach was available for cleaning and sanitizing purposes.
- Ice machine and ice scoop was in sanitary conditions.
- All foods were stored above the ground (at least 6 inches high).

*Temperature controls
>Freezers and Coolers measured during the inspection:
- 2 chest freezers in front of house measured between -25C to -28C.
- Two 2 door coolers in front of house measured 4C
- Prep cooler measured 2C
- 1 steel door upright freezer measured -18C.
- 2 door cooler at the back of house measured 3C
NOTE: All foods internal temperatures in the cooler measured between 0C to 4C.

>Hot holding units measured during the inspection:
- Rice in the rice cooker internal temperature measured 67C
- Pho broth internal temperature measured 74C (Stored in large pot on stove with fire).

>Temperature log sheets were available and properly maintained.

*Administrative
- FOODSAFE Level 1 certified staff was available during the inspection. Operator's certificate is valid until July 21st, 2024.
- Permit had valid decal and posted in a conspicuous location.

NOTE: Add more lighting at the back of house to facilitate proper cleaning of the food prep area and for pest monitoring purposes.
