Observation (CORRECTED DURING INSPECTION): -In use tongs, knives, pizza cutter stored in quats solution. This is not acceptable as quats may contaminate food as utensil not allowed to air dry and also sanitizer is not effective when equipment is soiled.
Corrective Action(s): -Store utensils in ice water or wash, rinse and sanitize after each use.

Comments

-General sanitation was satisfactory. Organization and cleanliness of back storage/cleaning area has improved since previous inspections.
-Handsink supplied with liquid soap and paper towel
-Walk-in cooler was at 2C
-Walk-in freezer was at -15C
-Sandwich display cooler was at 4C
-M3 cooler was at 4C
-Freezers were functioning and maintaining product in a frozen state.
-Hot holding temperatures were adequate (>60C)
-Taquitos 67-69C
-Chicken 64C-70C
-Temperatures of hot held product are being checked and recorded every 4 hours. Ensure that you are following up with staff when temperature records are not being completed. Ensure corrective action is being taken and recorded when requirements are not met.
-No signs of pest infestation noted at the time of the inspection. Pest Control contract is in place.
-Quats sanitizer (200ppm) available for sanitizing dishes
