Observation (CORRECTED DURING INSPECTION): Hand washing station in staff washroom is not supplied with paper towel. Staff placed paper towel in the dispenser during inspection.
Corrective Action(s): Maintain all hand washing stations adequately supplied with hot and cold running water, liquid soap and paper towel at all times to ensure staff are washing their hands properly and at adequate frequency.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
1. Two opened cans of tomato paste observed stored in the walk-in cooler. Staff voluntarily discarded the tomato cans during inspection.

2. Large cardboard box of ginger observed stored directly on the floor near the walk-in cooler. Staff placed the box of ginger on a shelf during inspecton.

Corrective Action(s):
1. Canned food items must be used immediately. Any leftover canned food items must be transferred to a food grade container and stored in the walk-in cooler OR discared to prevent chemical contamination of food.

2. All food must be stored covered and at least 6 inches off the floor to prevent potential contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Drain/fruit flies observed on site (<10) in the dishwashing area. Sticky fly traps are observed in place in non-food preparation areas. Professional pest control company is contracted.
Corrective Action(s): Monitor drain/fruit fly population and contact pest control company to assess and apply treatment if number of pests remains the same or increases. Store all food covered and protected from potential contamination. Replace sticky fly traps frequently.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: DDBSA/Lactic acid dispenser at 2-compartment sink is not functioning to dispense sanitizer at adequate concentration of 272/708 ppm. Sanitizer is measured at a concentration of 0-452 ppm. Staff attempted to repair dispenser during inspection, however it did not work.
Corrective Action(s): Contact repair-person to repair the sanitizer dispenser to ensure it is dispensing DDBSA/Lactic acid at a concentration of 272/708 ppm. Obtain DDBSA/lactic acid sanitizer strips from the technician to ensure you are able to monitor and verify sanitizer strength daily (or as per approved sanitation plan). Bleach is available on site and instructions to prepare bleach solution in the meantime was described to staff during inspection.

- Walk-in freezer at -20'C
- Bar coolers at or below 4'C
- Sandwich coolers at or below 4'C
- No hot-holding observed during inspection
- Dry stored foods observed in pest-proof containers
- General sanitation is good during inspection
- Hand washing stations (aside from staff washroom) adequately supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher available on site (*Note: dishwasher was turned off during inspection and takes 30 mins to 1 hour to warm up). Manager stated that staff verify the rinse temperature (at or above 180'F) before washing any dishes in the dishwasher
- Chemical dishwasher at bar measured at 12.5 ppm iodine concentration with test strip
- DDBSA/lactic acid sanitizer in spray bottle (X1) measured at 272/706 ppm
- 2-compartment sink available with drain plugs
- Ice machines (X2) in kitchen and at bar observed in good sanitary condition
- FOODSAFE Level 1 trained staff available on site
- Washrooms are maintained in a sanitary condition
- Professional pest control company is contracted
