304 - Premises not free of pests [s. 26(a)]
Observation:
Observed a large population of drain flies in the mop bucket, dishwashing, and jug washing areas. This was mentioned in the previous inspection, and a fly light was installed in the jug washing area but this doesn't seem to be effective. The presence of food debris and pooling water on floors, drains and equipment will harbor these pests. The odor of decomposting food by floor drains was detected.
Corrective Action(s):
The floor drains in the premises (especially in the mentioned areas) shall be professionally cleaned and treated for drain flies on a regular basis by a professional cleaning/pest control company. Fax or email the invoice to our office (lynda.quan@fraserhealth.ca) as proof that this has been completed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The ceiling tiles have accumulated dust on them. The dust can fall into food and contaminate it.
2) The floors have food stains along the base of the walls; beneath tables, equipment, and shelving units; and around foor drains. Food debris will attract and harbor pests.
3) The exhaust canopy has a service sticker on it indicating the next cleaning to be completed by June 2017. Accumulation of food and grease in the exhaust hood, filters and vents is a fire hazard.
Corrective Action(s):
1) Have the ceiling tiles cleaned to remove dust and grease, and ensure this is done on a regular schedule as per your Sanitation Plan.

2) Have the floors professionaly cleaned to remove all food stains, and ensure this is done on a regular schedule as per your Sanitaion Plan. Fax or email the invoice as proof that this has been completed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The upright cooler storing bagged lunches was leaking water from the compressor area. The water was dripping from the top of the unit, down the door, and pooling on the floor. The pooling water is a slip hazard and will attract pests.
2) There were some plastic food bins and lids that were cracked and/or chipped. Damaged food containers, equipment or utensils could allow pieces of plastic to fall into food. As well, damaged food equipment can NOT be properly cleaned (bacteria hides in the cracks).
Corrective Action(s):
1) Have the cooler unit maintenanced so that water no longer leaks from the unit and it works as per manufacturer's specifications.

2) Discard any damaged, cracked, and/or chipped food containers and equipment, and purchase new items.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -18C or colder; thermometers present; temperatures recorded daily.
- High temperature dishwasher (single tank, conveyor system) had a rinse cycle temperature of 71C at the plate's surface.
- Quats ammonia sanitizer was 200ppm.
- Food Manager has completed "Advanced fst." course and certificate expires in June 2018, this course is recognized as equal to the FoodSafe Level 1 course. Approximately 50% of staff possess the FoodSafe level 1 certificate.
- General sanitation satisfactory, but improvement needed in mentioned areas.
- Foods stored in food grade container; covered; labeled; date coded; in groups with proteins separate or below RTE foods; and 6" off the floor.
- No expired foods in use. FIFO rules followed.
- Food handlers use disposable gloves correctly and wash hands frequently.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
**Staff room/dry storage room needs a bit or re-organization so that there are designated shelves for staff to store their personal belongings (purses, sweatshirts, etc.) separate/away from food items. At the time, there were purses beside canned foods, and sweatshirts handing from shelving units with foods on them.
