Observation: Prep. cooler along the wall at 6.5C.
Correction: Immediately. Repair/adjust the temperature of the prep. cooler. Potentially hazardous food must be kept in a different coolers. Use ice for inserts and keep food as 1/2 of the container; or food must be finished as 2 hours, and leftovers must be discarded.

Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: A kitchen staff didn't wash hands between different tasks/and was wearing same glove (eg., did prep. near meat cooler and went to prep. a salad).
Correction: Ensure that all staff followed the FoodSafety Plan and proper hand washing procedures.

Observation: - Surface Quat sanitizer from 0pp to 100pp. Must be 200ppm.
- Food debris on plates after dishwashing cycle.
Correction: - Ensure that the surface sanitizer (Quat) at 200 ppm.
- Ensure that dishes & utensils properly washed and sanitized.
