Routine Inspection:

Kitchen:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers (walk-in, sandwich prep, under-counter) maintained at or below 4 degrees Celsius.
Freezers (2-door upright, chest) maintained below -18 degrees Celsius.
Hot holding units (for soup and gravy) maintained above 60 degrees Celsius.
- Low temperature dishwasher sanitizing dishes with a concentration of 50 ppm chlorine.
- Concentration of QUATs sanitizer in spray bottle = 200 ppm.
- Ice machine maintained in a sanitary condition. Ice scoop stored in a designated holder.
- Meat slicer and potato slicer/masher maintained in a sanitary condition.
- Observed proper thawing method (packaged items in cold water) in sink.

Bar:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Glass washer sanitizing glasses with a concentration of 50 ppm chlorine.
- Under-counter coolers maintained at 4 degrees Celsius.

Overall:
- General food storage practices very good:
Food covered and protected from contamination.
Food stored at least 6 inches (15 cm) off the floor.
Dry storage area organized.
Food in all cold storage units well organized.
- No signs of pest activity at the time of inspection.
- Overall cleanliness satisfactory.
